Easy Crab Salad
1- 12 oz package of imitation crab meat like Crab Classic. Score a coupon >> SAVE 50¢ on one package of Crab Classic, Lobster Classic or Seafood Snackers
2 Tablespoons of mayonnaise (may need to add an additional teaspoon if you like it with more “sauce”)
1/2 Teaspoon of lemon juice
1/8- 1/4 Teaspoon of white pepper (to taste)
1/8-1/4 Teaspoon of celery salt (to taste)
2-3 Green Onions, thin sliced including the green stems
3 stalks of celery, fine diced
In a bowl, break up the crab meat and toss with the lemon juice. Set aside while you work on the onions and celery. Thin slice 2-3 Green Onions, green stems included. Dice (fairly fine) 3 stalks of celery
Add the Mayonnaise, Celery Salt, and Pepper to a bowl and mix well. Add the Green Onion and Celery to the bowl with the Crabmeat, then add the mayonnaise mixture and mix until everything is well coated. Chill at least an hour and much better several hours to overnight. Add a few drops of milk if the sauce needs to be thinned a bit. Serve cold with crackers or add to a green salad.
